Sawi Putih Kopek (often called Kao Pek or Jiu Bai in Cantonese) refers to a variety of Chinese Cabbage or White Mustard.
It features thick, milky-white stalks and broad, bright green leaves. The stalks are crunchy and juicy, while the leaves are tender. It also has a mild, slightly sweet, and clean taste compared to other mustard greens.
This vegetable is highly versatile in Asian cuisine due to its ability to absorb flavors. It can be stir-fried, include in fish ball soups or noodle dishes, cooked in a turmeric-coconut milk broth (Malay-style masak lemah) and as pickling.
These vegetables are high in Vitamin C (for immunity), Vitamin K (for bone health), and Vitamin A, fiber and also minerals such as potassium, calcium, and folate.
